Ramen Vegetable Casserole

My New Years Goal to cook more took a little detour but now that my appetite is back in full swing, I'm back to blogging recipes.  This is one I found in a magazine about 15 years ago when L.J. and I were first married and has been a staple for us ever since.  It's cheap, easy and tastes pretty good.  Perfect for newlyweds and families too.




Ingredients:
1 lb ground beef
2 packages beef flavored Ramen noodles
1 bag frozen vegetables - any variety
  1. Brown ground beef.  Add the seasoning contents of one Ramen pack.  Keep warm.
  2. In a large skillet combine water, frozen vegetables and break up the Ramen noodles.  Add the other seasoning packet.
  3. Cover and heat until the vegetables and noodles are ready.  I remove the lid and stir a few times so the noodles don't stick.
  4. Add the meat to the noodles & serve.

  1. we make a really similar one but I've never tried it with gr. beef!
